Mushroom and Stilton vegetarian burgers

Introduction:

These vegetarian burgers make a nice change from most supermarket's breaded potato efforts


Ingredients:

Preparation Time: 15 minutes Cooking Time: 10 minutes Serving: 4

Instructions:

  1. coarsely chop the mushroom and soften in a microwave
  2. coarsely chop the red onion and soften in a microwave
  3. pulverize the oats in a food processor or with a hand blender
  4. either work the chickpeas with your hands or give them a quick once over in a food processor ensuring there is still a chunky texture - be careful not to make too smooth
  5. combine all the ingredients in a bowl and make into 4 big burger size patties
  6. Fry the burgers in a shallow frying pan in a little oil on both sides until golden and crispy on the outside
  7. Serve in sesame seed rolls with sliced beef tomato, a little salad and garlic mayo. Goes well with new potato chips and a side salad
